Lemon linguine with ham

Try this tasty, tangy pasta dish, a perfect summer lunch or light supper

- 400g linguine
- cupful frozen peas
- 200ml tub crème fraîche
- grated zest ½ lemon and juice of 1 lemon
- 3-4 slices of cooked ham, cut into strips
TipA healthier option
You can swap mascarpone and crème fraîche for low-fat cream cheese and fromage frais. however, don’t overheat these substitutes as they can split and turn grainy. For extra fibre, wholewheat pasta can be used in any of the dishes, but add 3-4 mins to the cooking time.
Cook pasta following pack instructions, adding the peas for the final 2 mins of cooking.
Drain the pasta well and return to the pan. Stir in the crème fraîche, lemon zest and juice, then season. Serve with the ham strips scattered over.
