Courgette fritters

Use grated courgette to make a simple but delicious summery starter or light supper with just five main ingredients. Use up a glut from the garden

Ingredients

  • 250g courgettes, grated
  • 20g plain flour
  • 1 egg, beaten
  • 25g finely grated parmesan, or vegetarian alternative (optional)
  • 1 tbsp olive oil
  • 170g tub roasted red pepper hummus, to serve

Method

  1. Combine the grated courgette, flour, egg and parmesan in a large bowl.

  2. Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away with red pepper hummus.
