  • 1 tsp fresh cucumber slices
  • 2 sprigs of thyme
  • 60ml green tea
  • 40ml green apple juice
  • 10ml fresh lime juice
  • 10ml store-bought pasteurised egg white or a whipped egg white


  1. Muddle all the ingredients in a large jar.

  2. Mix with ice and shake well until the liquid is very foamy. Strain in a glass with crushed ice and garnish with fresh thyme sprigs and cucumber slices.
