Spanish latte (café con leche)
Try making your own Spanish-style coffee. Traditionally, the milk in café con leche is hot and only lightly foamed – but the key to the recipe is a ratio of 1:1 coffee to milk

Ingredients
- 100ml whole cow’s milk (or UHT for that distinctive Spanish taste and mouthfeel)
- sugar , to taste
- 100ml strong espresso , best made with freshly ground beans
Method
Put the milk and sugar, if using, in a small saucepan and heat until small bubbles appear around the edges. Continue to heat until steaming hot (65–70C on a thermometer) and lightly whisk.
Pour the espresso into a cup and pour over the milk.
