Watermelon pizza New-recipe-icon

Ingredients

  • 1 slice watermelon
  • 120g pineapple pieces
  • a few coriander or Thai basil leaves
  • 1-2 tsp toasted coconut flakes
  • ½ lime (juice and zest)
  • 1 tbsp honey

Method

  1. Take 1 round slice watermelon and cut into wedges, as you would a pizza, and lay them on a board. Scatter over 120g pineapple pieces, a few coriander or Thai basil leaves and 1-2 tsp toasted coconut flakes. Mix the juice ½ lime with 1 tbsp honey and drizzle over the top. Sprinkle with freshly cracked black pepper and zest ½ lime.
