Pea purée

Ingredients
- 400g frozen peas , defrosted
- 4 tbsp double cream
- small handful of mint leaves , roughly chopped (optional)
Method
Put everything in a high-powered blender with a good crack of black pepper and a pinch of salt. Blend until smooth. If you want to make it extra-smooth, strain through a sieve. Season to taste, if needed.
