  • ½ green cabbageor pointed cabbage, shredded as finely as you can
  • 1 tbsp white miso
  • 1 tbsp soy
  • 1 tbsp mirin
  • 1 large lime, juiced
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil

Preparing ahead

The cabbage will go soggy if left dressed in the fridge for longer than an hour, so if you need to prepare ahead, simply make up the dressing and add it just before serving.

  1. Whisk the dressing ingredients together and toss into the shredded cabbage. Keep in the fridge (see tip below) until ready to serve alongside tonkatsu or other Japanese dishes.
