Signature 3, The St. Regis Saadiyat Island Resort
The Signature 3 team has curated a one-off, four-course menu featuring Easter-themed dishes, that is available for lunch and dinner.
Starting with a mouthwatering foie gras torchon with gold egg truffle espuma and cinnamon pain perdu, the menu then moves on to a delicate white asparagus velouté with goat’s cheese and truffle snow. For the main course, diners can choose between fresh pan-seared sea bass with roasted parsnips, baby carrots and a seafood emulsion or succulent corn-fed chicken supreme, with wild mushrooms, baby carrots, Romanesco and sage jus.
Finally, the dessert presents itself in the form of a spectacular Easter egg surprise with an ivory chocolate Valrhona nest, hazelnut financier, coconut bavarois and mango vanilla coulis.
