Air fryer shawarma-spiced halloumi wraps
Pile up flatbreads with shawarma-spiced halloumi, hummus and slaw to make these flavour-packed wraps. They’ll prove a hit with the whole family

Ingredients
- 4 flatbreads or large wraps
- 4 tbsp hummus (optional)
- yogurt or hot sauce , for drizzling
- coriander leaves , to serve (optional)
- 225g block halloumi
- 1 tbsp olive oil
- 1 tbsp shawarma spice mix
- 150g red cabbage , finely shredded
- 1 carrot , coarsely grated
- ½ lemon , juiced
- ½ small garlic clove , finely grated
Method
- To make the slaw, mix the cabbage and carrot together in a bowl. Stir through the lemon juice, garlic and a pinch of salt. Will keep covered and chilled for a day. 
- Cut the halloumi into chunky batons. Toss with the oil, spices and a pinch of salt until well coated. Air-fry at 200C for 8-10 mins, shaking halfway through, until golden and crisp at the edges. 
- Warm the flatbreads, then spread over the hummus (if using).
