Air-fry vegetables instead of baking in the oven, then serve as a side with your favourite mains

Ingredients
- 1 small butternut squash , roughly chopped
- 1 sweet potato , roughly chopped
- 1 red pepper , roughly chopped
- 2 red onions , cut into 8 wedges each
- 200g Jersey Royals or baby potatoes
- 2-4 garlic cloves , lightly bashed
- a few thyme sprigs
- 1 tbsp olive oil
Method
Tip everything into the air fryer basket and shake to coat in the oil. Roast the veg at 200C for 20 mins, then shake again. Cook for another 10-20 mins until the veg is cooked through.
