The signature course follows with Wok-Baked Lobster served in a superior broth with baby pak choi, before moving into mains such as Smoked Chilean Seabass in black bean sauce, Sweet and Sour Chicken with bell pepper and pineapple, and a Braised Truffled Mushroom trio of shimeji, shiitake, and eryngii, served with stir-fried green beans and Hakka noodles. The menu finishes with Baiju Ba Ba infused with kumquat and green cardamom for a light, aromatic close.
