1 small sweet potato (about 150g), peeled and cut into chunks
1 chicken breast, cut into chunks
1 small courgette (about 150g), cut into chunks
4 broccoli florets
2 tbsp plain yogurt
Put the sweet potato into a medium saucepan, cover with water. Bring to the boil and simmer for 3 mins, then add the chicken, courgette and broccoli and simmer for around 7 mins until the chicken is cooked through and the veg are tender.
Drain, then transfer to a food processor with the yogurt. Pulse until smooth, adding enough milk to loosen. Serve one portion and divide the rest between small containers and freeze.
