Pulled ham & maple mustard slaw

Ingredients

  • 2 tsp rapeseed oil
  • 1 tbsp sherry vinegar
  • ¼ tsp wholegrain mustard
  • 2 tsp maple syrup
  • ? small red cabbage, shredded
  • 6 ready-to-eat dried apricots, cut into strips
  • 1 banana shallot, chopped
  • 6 walnut halves, broken into pieces
  • 2-3 tbsp roughly chopped parsley
  • 100g piece of ham, pulled into pieces

Method

  1. Mix the oil, vinegar, mustard and maple syrup in a bowl. Stir in the cabbage, apricots, shallot, walnuts and parsley. Toss well, then gently fold the ham through.
