Mushroom brioche soldiers

Transform breakfast classic egg and soldiers with lashings of mushroom pâté and a sprinkling of tarragon on strips of brioche – the perfect partner to a runny yolk

  • 1 large egg
  • 2 slices of brioche
  • 60g mushroom pâté
  • ½ tbsp finely chopped tarragon (optional)


  1. Bring a small pan of water to the boil. Add the egg and cook for 5 mins. Toast the brioche, then mix the mushroom pâté and tarragon, if you like. Spread over the toasted brioche, cut into soldiers and dip.
