Ingredients
- 1 stick plus 1 tbsp unsalted butter , softened
- 1½ tbsp dark molasses
- 1⅓ cups light brown soft sugar
- ½ tsp fine sea salt
- 1 egg
- 1¾ cups plus 1 tbsp all-purpose flour
- ¼ tsp baking soda
- ¼ tsp ground cloves
- 1½ tsp ground ginger
- ½ tsp ground cinnamon
- ¼ cup granulated sugar
Method
Beat the butter, molasses, brown sugar and salt together in a large mixing bowl. Add the egg, then beat in all of the remaining dry ingredients, except the sugar. Refrigerate for 1 hr.
Heat the oven to 400F/gas 6. Line two cookie sheets with parchment paper. Roll the cookie dough out into 20 even-sized balls (weighing for accuracy, if you like). Tip the sugar onto a small plate, then roll each ball in it to coat. Space each ball out on the cookie sheets, then bake for 9-10 mins until golden brown. Leave to cool completely on a cooling rack.
