Brown sugar brandy cream

This simple brandy cream can be made in five minutes and is lighter than some traditional brandy butters

  • 400ml crème fraîche
  • seeds scraped from 1 vanilla pod
  • 3 tbsp brandy
  • 3 tbsp light muscovado sugar, plus a little extra for sprinkling


  1. Mix together the crème fraîche, vanilla seeds, brandy and sugar. This can be chilled for up to 2 days – just give everything a good stir. sprinkle on a little extra sugar before serving.
