Corn fritters

  • 250g canned baby corn
  • 1 egg
  • 30g self-raising flour
  • 80ml water
  • A pinch of salt
  • 260ml oil, for frying
  • Small handful of parsley, chopped (optional)


  1. Mix together the egg, flour, water and salt, until you get a smooth texture. Add the corn to this, and mix again.

  2. Heat the oil, and pour 2 tbsp. into a pan. Fry until golden brown and place on paper towels to drain the oil. Serve with the chopped parsley, if you like, and your favourite dipping sauce.
