Air-fryer sweet potato hash

This crispy, smoky and satisfying air-fryer sweet potato hash is perfect for brunch or as main dish topped with a runny fried egg

Ingredients

  • 500g sweet potatoes , scrubbed and cut into 2cm cubes
  • 1 red pepper , deseeded and diced
  • 1 red onion , roughly chopped
  • 1 green chilli , thinly sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 2 eggs
  • 4 spring onions , thinly sliced
  • 1 tbsp fresh dill or coriander , leaves picked

Method

  1. Heat the air-fryer to 200C. Toss the sweet potatoes, pepper, onion, green chilli and 1 tbsp of the olive oil together in a large bowl. Sprinkle over the paprika and mix until evenly coated.

  2. Tip into the air-fryer basket and cook for 15-20 mins until tender and browned.

  3. Meanwhile, heat the remaining 1 tbsp olive oil in a small frying pan and cook the eggs to your liking.

  4. Stir the spring onions and herbs into the hash and divide between two shallow bowls. Top each with a fried egg and serve.
