Recipe from Mickey Minthu, mixologist at Bã Restaurant and Lounge, Fairmont The Palm


1 tsp fresh cucumber slices
2 sprigs of thyme
60ml green tea
40ml green apple juice
10ml fresh lime juice
10ml store-bought pasteurised egg white or a whipped egg white


  1. Muddle all the ingredients in a large jar.
  2. Mix with ice and shake well until the liquid is very foamy. Strain in a glass with crushed ice and garnish with fresh thyme sprigs and cucumber slices.
