LIMA Dubai launches new ceviche menu

 

LIMA Dubai, the urban dining destination at The Square – City Walk, has introduced an immersive ceviche experience for diners three nights a week.

This exclusive experience is only available for a seating of four guests at a time, as diners are taken on a journey through Peru’s national dish in a four or seven course menu, created by LIMA Dubai’s head chef, Diego Sanchez.

Different forms of ceviche have been consumed in Peru for thousands of years, used as a way to cook and preserve food without heat, through combining meat or fish with citrus, which offers a tender and fresh flavour.

Seated at the ‘El Puerto’ (the port) ceviche bar, guests can witness LIMA’s skilled chefs as they carefully each intricate course. Highlights from the menu include Salmon Belly Tartare – salmon combined with yellow potato causa, Rocoto chili and horse radish, Razor Clam Ceviche – Razor clams, yellow chili sauce and Padano cheese and the Duck Ceviche – Duck leg confit, Cured duck breast with Nikkei sauce and decedent foie gras.
