Turkey & pesto croissants

Use up leftover Christmas turkey in these savoury croissants. Customise with other ingredients you have in the fridge for a great brunch or lunch option

Ingredients

  • 2 croissants
  • 100g leftover roast turkey, shredded
  • 1½ tbsp pesto
  • cooked bacon, mature cheddar, spinach and rocket, or any toppings of your choice

Method

  1. If you prefer your croissants to be warm, heat the oven to 180C/160C fan/gas 4 and warm for 4-5 mins (or, heat them in the microwave in 10-second bursts).

  2. Meanwhile, put the turkey, pesto, a pinch of salt and a few grinds of black pepper in a small bowl, and mix well. Slice the croissants in half lengthways. Spoon half the turkey pesto mixture into each croissant and layer any optional extras over the top (we used cooked bacon, cheddar, spinach and rocket), then close and serve.
