Tahini dressing

Ingredients

  • 75ml tahini
  • ½ lemon , zested and juiced
  • 30ml extra virgin olive oil
  • 1 garlic clove , grated
  • 1 tsp maple syrup
  • 10g chives , finely chopped

Method

  1. In a small bowl, whisk together the tahini, lemon zest and juice, olive oil, grated garlic, maple syrup and a good pinch of salt and pepper. Whisk in 75ml water, until it’s a thick but pourable dressing. Stir in the chopped chives, or any other soft chopped herbs you like.

  2. Use to dress your salad – we made a salad of shaved brussels sprouts, rocket, carrot, cucumber and avocado.
