Sausage, gherkin & pickled onion toad-in-the-hole

Sausages don't come much better than in toad-in-the-hole. In this easy version, they're served with gherkins and pickled onions for the ultimate comfort food

Ingredients

  • 6 sausages
  • 2 red onions, cut into wedges
  • olive oil
  • 140g plain flour
  • 3 eggs
  • 300ml milk
  • 1 tsp English mustard
  • handful of drained gherkins
  • mini pickled onions

Method

  1. Heat oven to 220C/200C fan/gas 7. Tip the sausages into a small roasting tin with the red onions and some seasoning. Drizzle with olive oil and roast for 10-15 mins, shaking halfway.

  2. Meanwhile, whisk the plain flour with the eggs, milk, English mustard and some seasoning. Pour over the sausage-onion mixture. Scatter the gherkins and mini pickled onions into the mixture and bake for 25 mins.
