Ingredients
- 200g of various coloured beetroots, skin peeled off
 - 50g rocket leaves
 - 30g hazelnuts, chopped
 - 20g ginger, chopped
 - A few drop of lemon juice
 - 2 tbsp hazelnut oil
 - Pinch of salt and pepper
 - Parsley, for garnish
 
Method
Julienne the beetroots and place in a bowl. Add the rest of the ingredients and drizzle the hazelnut oil all over. Mix well, season, garnish with parsley and serve.
