Ingredients

  • 1-2 tbsp hot sauce
  • 1 lime , juiced
  • 2 tbsp extra virgin olive oil
  • 150g cooked, peeled king prawns
  • 400g can black beans , drained and rinsed
  • 1 avocado , cut into cubes
  • ½ cucumber , cut into cubes
  • 100g cherry tomatoes , halved
  • 1 small red onion , finely diced
  • handful of coriander , finely chopped

Method

  1. Mix the hot sauce, lime juice and olive oil together in a small bowl with some seasoning. Toss the remaining ingredients together in a large bowl. Pour over the dressing, toss again and serve.
