One-pan baked feta with summer tomatoes, oregano & butter beans

Bake feta in the oven with garlicky, herby tomatoes and butter beans for an easy one-pan summer dish. Serve with crusty sourdough for scooping

Ingredients
- 400g Morrisons Cherry Tomatoes , halved or quartered
- 400g butter beans , drained
- 2 tsp dried oregano
- 2 tsp paprika
- 3 garlic cloves , crushed
- 3 tbsp extra virgin olive oil
- 200g feta
- pinch of chilli flakes (optional)
- 1 lemon , zested and ½ juiced
- toasted sourdough , to serve
Method
Heat the oven to 200C/180C fan/gas 6. Tip the Morrisons Cherry Tomatoes and beans into a baking dish. Scatter with the oregano, paprika and garlic and drizzle with 2 tbsp oil. Season and toss to coat the beans in the garlicky oil.
Nestle the feta in the middle of the dish, top with a pinch of chilli flakes, lemon zest and a drizzle of oil. Squeeze the lemon juice over the beans and tomatoes.
Bake for 25-30 mins until the feta is tender and golden brown. Serve with toasted sourdough for scooping.
