This Ramadan, Royal Majlis, Emirates Golf Club offers an Iftar teeming with innovation and heartfelt tradition. In a special collaboration, acclaimed Chef Zahra Abdalla joins forces with the club’s Executive Chef, Dayan Anthony, to present a menu that bridges Arabic and Iranian culinary heritage with contemporary techniques, bright and hearty flavours, and a commitment to sustainability and zero-waste cooking.
As golden hour settles over the club’s verdant greens, the Royal Majlis transforms into a tranquil sanctuary. Lanterns cast a warm glow while the soft strains of the oud set the tone for this Iftar, complementing the fragrant aromas of fresh, locally sourced ingredients.
Every dish tells a story. Chef Zahra draws on personal memories, from her teenage days making dumplings with her best friend’s grandmother, now reinterpreted in the delicate Afghani Mantu—steamed parcels with subtly spiced fillings, served with yoghurt and a rich split-pea and tomato-based sauce. The Saffron chicken with freekeh reflects family influences, blending the flavours of her mother’s Persian kitchen with her mother-in-law’s Palestinian recipes. Meanwhile, the Beetroot Bil Zeit, a zero-waste vegan creation, celebrates both beetroot and its leaves, exemplifying mindful, sustainable cooking.
Royal Majlis Iftar
The journey begins with an expansive selection of salads and mezze, each respecting the ingredient. Dishes such as roasted cauliflower salad and roasted pumpkin, kale & freekeh salad combine freshness with comfort, while the hummus trio offers a classic using locally sourced produce, alongside beetroot and parsnip variations. Purslane, zaatar & tomato salad, and fattoush add brightness and texture, refreshing the palate.
Vegetarian offerings include Fattat beitinjan and Whipped feta with date molasses caramelised carrots, finished with a pistachio pesto made from carrot tops. The main course features slow-braised Kabab torsh short ribs with a silky celeriac purée. The evening concludes with a nostalgic special of Choux pastry with saffron and pistachio ice cream.
