Guests are invited to embark on a nostalgic journey through Gascony, guided by a selection of dishes that reflect Chef Koffmann’s most cherished recipes. The evening begins with a comforting Soupe aux Fèves, followed by delicately prepared Sweetbreads with Mushrooms. Seasonal highlights include Spring Vegetables with Foie Gras and Turbot with capers, saffron and tomatoes, showcasing fresh ingredients and traditional French techniques. To end, a dessert of Summer Fruits in Red Grape offers a sweet finish.
