A new chapter begins: Chef Koyi Tanabe takes the helm at Salvaje and Arrogante Dubai

With more than 16 years of international experience across Peru, the Dominican Republic, Italy and the Middle East, Chef Koyi brings both skill and creativity to the group. Born in Peru to Japanese parents, he bridges two worlds, blending tradition with innovation. Trained in Japanese, Peruvian and Italian cuisines, his cooking combines the precision of Japanese technique with the colour and spirit of Latin America, echoing Salvaje Group’s unique identity.

His career has taken him to Maido in Lima, ranked No. 1 in the World’s 50 Best Japanese Restaurants, where he worked alongside celebrated chef Mitsuharu Tsumura. There, he gained global recognition and had the rare opportunity to prepare a dinner for ten of the world’s leading Michelin-starred chefs. He later honed his craft at Eden Roc Cap Cana in the Dominican Republic, the country’s only Relais & Châteaux property.

At Salvaje Dubai, Chef Koyi will serve new expressions of Japanese–Latin fusion, shaped by seasonal ingredients. At Arrogante, he will focus on Italian traditions with a modern touch, bringing together food, music and design in one space. His arrival marks a new chapter for Salvaje Group in Dubai, with both restaurants evolving under his direction.
