What made you decide to keep the restaurant open during this time?

Hospitality, for me, is about creating a sense of escape and comfort. Even during uncertain times, we felt it was important to offer guests a place where they can step away, even briefly, and enjoy a thoughtfully crafted experience — something warm, familiar, and reassuring.

Have you noticed guests approaching dining out differently lately?

Yes, very much so. With everything happening around us, guests are seeking connection more than ever. Dining has become less about routine and more about meaningful moments — people coming together to support one another, to share time, and to create memories in a safe and welcoming environment.

Are guests gravitating toward dishes that feel more comforting or familiar?

There is an interesting balance. Guests are still curious and open to new experiences, but they gravitate towards dishes that carry a sense of familiarity in flavour. It’s about discovery, but with comfort. Something new yet emotionally connected.

Is there a dish on your menu right now that feels especially meaningful to you?

One dish that reflects my personal journey is our braised beef cheek, served with apple and celeriac purée and enhanced with subtle Asian spices. It represents my approach to cooking, combining classical techniques with influences gathered throughout my travels.

How are you and your team showing up for each other to keep morale strong?

It starts with empathy. We focus on supporting one another through simple but meaningful gestures such as listening, encouraging, and maintaining a positive mindset. A strong kitchen is built on trust and human connection, especially during challenging times.

What would you like to say to the community at this moment?

Life is short. Take time to enjoy it, to connect, and to appreciate the moments we share.
