Eggless Rum Soaked Plum Cake

Delicious, moist, fluffy and eggless version of the festive favorite rum soaked plum cake! Christmas is incomplete without some fruity cakes and this cake is complete with all the ingredients for soaring the festive spirits high!

  • 1.25 cup all purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cup granulated sugar
  • 1/2 tsp cinnamon powder
  • 1/2 tsp nutmeg powder
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1/4 cup yogurt
  • For Soaking: 1 Cup Dark Rum and 250 grams Mixed dry fruits (raisins, dried cranberries, dried kiwis, dried apples, dried mangoes, dried berries etc.)


  1. Soak the dry fruits in dark rum in an air tight container. Keep it for 2-3 weeks (Minimum 1 week recommended).

  2. Preheat the oven to 170 C. Lightly grease an 8-inch round cake pan.

  3. In a large bowl add the all purpose flour, baking soda, baking powder, cinnamon powder, nutmeg and sugar. Mix all the dry ingredients well.

  4. Add the vegetable oil, milk, yogurt, vanilla essence and 1/4 cup leftover rum from soaked fruits.

  5. Mix all ingredients together using spatula or electric mixer on low speed.

  6. Add the drained rum soaked dry fruits to the mixture and just fold the mixture using spatula.

  7. Pour the batter in the greased pan and spread evenly.

  8. Bake for about 45 min. Cover the top of the tin with foil to avoid the top from browning too much after 25 minutes.

  9. Insert toothpick in the middle of the cake. Cake is ready if the toothpick comes out clean.

  10. Cool the cake completely and ENJOY!
