Tex-Mex beans

Drain some canned beans, add herbs and crunchy tortilla chips and you've got a quick side dish for grilled meat or fish

Ingredients

  • 3 x 400g/14oz cans mixed beans
  • 1 small red onion, sliced
  • small bunch coriander, chopped
  • 6 tbsp garlic-flavoured oil
  • 2 tbsp white wine vinegar
  • handful tortilla chips, roughly broken

Method

  1. Mix the beans, onion and coriander together, then stir in the oil and vinegar with some seasoning. Top with the tortilla chips.
