Roasted balsamic cauliflower

Ingredients

  • 1 large cauliflower, cut into bite-sized florets
  • 2 tbsp olive oil
  • 1 garlic clove, finely chopped
  • 2 tbsp balsamic glaze
  • 1 red chilli (deseeded if you don’t like it too hot), finely sliced

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the cauliflower on a large baking sheet. Combine the oil and garlic, and drizzle over the cauliflower and roast in the oven for 10 mins.

  2. Drizzle the balsamic glaze over the cauliflower and roast for a further 15-20 mins until it is cooked through. Serve immediately with the chilli scattered over.
